Why were gladiators vegetarian?

Much of their diet consisted of beans and barley. It was cheap and they had easy access to it. There was no significant symbolism to vegetarianism in gladiator diets, they did sometimes have access to meat—but it was typically a luxury.
They also had what would equate to a modern-day sports drink supplement. It consisted of vinegar and plant ash, which provided needed nutrients to support their bones. (Source: Vegetarian Gladiators? Vintage News. Ian Harvey)
Regular roman soldiers were not on a vegetarian diet. They were often provided food via barracks rations. They also frequently hunted (looted) and provisioned food while on deployment as well.
But yes—gladiators were mainly vegetarians for financial reasons. Though they probably unknowingly benefitted from such a diet.
